2021 Dr. Redtail Cabernet Franc
Above the vineyard she soars, scanning the vineyard with surgical precision. Dr. Red Tail is dedicated to Northwest Michigan’s premier pest control, the Red Tailed Hawk. This Cabernet Franc is robust and wiry, with notes of strawberry, raspberry, and light bell pepper. When it comes to Michigan red wine, this is just what the doctor ordered.

Wine Profile
Tasting Notes
Notes of strawberry, raspberry, red plum, light bell pepper, leather, and a hint of chili pepper.
Production Notes
Three years of barrel aging in French oak contribute to the wine's smooth finish, while its acid profile provided the ability to age gracefully maintaining its flavor and aroma.
Winemaker Notes
Standard cool maceration, fermented to dry with commercial yeast strain then barrel aged in new and used French oak.
Food Pairing Notes
Pork belly with plum sauce, grilled chicken with roasted vegetables, turkey with cranberry sauce, roasted duck, feta, goat cheese and brie.
Other Notes
Primarily known as a Bordeaux region varietal but origins point to Spanish Pais Vasco. Mid-ripening, rather vigorous, suited for clay-limestone soils but performs well on sandy soils. Small berries. Buds and matures earlier than Cabernet Sauvignon, easier to ripen fully.
